And not that I am an expert on converting girlfriends into gamers, but I agree with what Satis is saying. I don't think most women even care about the games as such, but regard it more as time they can spend with their man. I bet they even like just watching you play a game if they can follow what's going on and if you involve them in your actions/choices. It's more the company than the activity that they enjoy, I think.
Personally, I go crazy when i see someone play without me doing anything. I'd strangle them with their mousecord.
I also used to smash the console controllers into my brothers' heads when they beat me at a game (one once had to get stitches from that). That improved to just general rage by now, but they still shouldn't make too much fun of my defeats.

To me, the key to the coaxing was co-op play. single player and she'd get bored, competitive multiplayer she'd get owned and annoyed. But when you play together and she feels like she's contributing to the game (even if she's really standing in the back putting lots of holes in the walls with her machine gun) she tends to get more immersed.

And then it creates even larger ones.
J, start her out with games like Plants vs. Zombies, Crayon Physics Deluxe and whatnot. Then move to the Sims or something like it...then it's RPG light time, and then something like Bg2. I wouldn't try Rape Simulator Extreme or Manhunt.
Not immediately anyway.

Still got tons of Dragon Age time to go though.
